INSIDERS PROJECT: FLAVOUR PROFILE


Flavour Profile is a five-episode documentary-style series where we meet with chefs redefining Canadian food.

We explore their personal food stories and unique takes on the foods they love. It’s an inspirational look at their craft, their journey to get where they are today, and how it’s altering Canada’s food landscape. Our small, agile crew of three travelled across Canada to seek out the brightest culinary creators in Canada and learn their stories.

I produced the series as a whole and was lucky enough to get the opportunity to direct episode 4.

 

Ep 5. Antonin Mousseau-Rivard

Le Mousso, Montreal


Chef Antonin Mousseau-Rivard won Most Innovative Chef in 2019 for his culinary achievements with his restaurant, Le Mousso, and sister restaurant, Petit Mousso. We set out to learn more about Chef Mousseau-Rivard, his day-to-day life, and the importance of supporting local merchants and producers in his home province of Québec.

 

ep 4. Christie Peters

The Hollows, Saskatoon


Christie Peters is the chef and owner of The Hollows and Primal Pasta in Saskatoon, along with her partner Kyle Michael. She is a badass chef based in Saskatoon and the only individual I've ever met who has butchered a whole pig and has used every little bit of it for food and, believe it or not, body soap made of pig fat. Her career has led her to work in kitchens in San Francisco to Amsterdam and landed a culinary apprenticeship at Noma in Copenhagen.

Calcutta Cricket Club, Calgary


Chef Rene Bhullar, Artist Maya Gohill, Restauranteur Shovik Sengupta are three second-generation Canadians that run the popular Calcutta Cricket Club in Calgary. Together they created a unique vibe that brings together the comfort culinary experiences of Calcutta and Bengali cultures, respectively.

La Cubana, Toronto


Chef Corinna Mozo is the head chef, owner, and operator of La Cubana in Toronto. We sit down with Chef Mozo and learn a little about her humble beginnings and how she created a hometown stable built on family values and Cuban comfort food.

A visionary chef, marked the inception of dailo in Toronto in 2010. His innovative approach involves skillfully intertwining Chinese flavors with a myriad of culinary influences, successfully breathing new life into the city's vibrant food landscape.
