INSIDERS PROJECT: FLAVOUR PROFILE (2019)


Flavour Profile is a five-episode documentary-style series where we meet with chefs redefining Canadian food.

We explore their personal food stories and unique takes on the foods they love. It’s an inspirational look at their craft, their journey to get where they are today, and how it’s altering Canada’s food landscape. Our small, agile crew of three travelled across Canada to seek out the brightest culinary creators in Canada and learn their stories.

I produced the series as a whole and was lucky enough to get the opportunity to direct this episode with Christie.

 

Christie Peters | The Hollows, Saskatoon


In this episode of Flavour Profile, we follow Chef Christie Peters, former owner and chef at The Hollows (RIP), Pop Wine Bar, and Primal Pasta in Saskatoon, SK. Peters’ conviction for reshaping Saskatoon cuisine focuses on championing sustainability and featuring local ingredients. Her restaurants celebrate the prairie provinces through a sustainable-minded philosophy, including whole-animal butchery (leftover animal fat is turned into soap), local heritage grains and home-grown ingredients, and their compost. From drying, fermenting, freezing and canning in the winter to using local berry varieties and garden-fresh ingredients in the summer, Peters is inspired by all the prairies have to offer and what is yet to be discovered. The prairie provinces are often overlooked, but there’s a lot to be said about what’s going on in the Saskatchewan food landscape, and if it’s edible, she’s determined to cook with it.
